Confession time: I'm addicted to Pinterest! So addicted! It's been my saving grace during football season - the boys' not Packers ;) - because I seriously have NO TIME to cook when I'm fulfilling my duties as taxi driver! But I have found so many incredible recipes on Pinterest I've lost count! And thankfully the boys have liked almost every one of them! But last night, they literally stood up at the table and gave me a round of applause! It was priceless! Here's the magic recipe that did it. Let me know if you try it and what you think!

CROCKPOT: Add 2 pounds chicken breast tenderloins.
Mix together 1 cup pineapple juice, 1/2 cup packed brown sugar and 1/3 cup light soy sauce. Pour mixture over chicken.
Cook on low 6-8 hrs or high 3-4 hours and they should just fall apart.
I served ours over brown rice with a side of pineapple and these easy potatoes:

Slice potatoes into very thin slices (1/4 inch). Toss potatoes in (3Tbsp) olive oil, Italian seasoning (1tbsp) and salt (1tsp) in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.
