To Die For Raspberry Cream Truffles
12 ounces good quality semi-sweet chocolate chips
1/3 cup whipping cream
2 Tablespoons cream cheese
1/4 cup raspberry schnapps, or another liqueur
Place chips in a mixing bowl. Combine whipping cream and cream cheese in a bowl or saucepan and heat in microwave or stovetop just to boiling. Immediately pour over chips, add liqueur. Beat until smoothly blended. Chill 1-2 hours until firm. Roll in hands to form 1-inch balls. Roll balls in confectioners' sugar. These may be frozen for up to 6 months, but the family will never allow them to last that long!
