Taffy Apple Cookies
Ingredients:
1/2 cup butter
1/4 cup firmly packed brown sugar
1/4 cup sifted confectioners sugar
1/4 teaspoon salt
1 unbeaten egg
1 tablespoon vanilla
2 cups sifted flour
1 box of toothpicks
1/2 pound of light colored caramel
2/3 cups evaporated milk
2 small bags of finely grounded walnuts
Directions:
Cream butter, add brown sugar and confectioners sugar, salt, cream well. Blend in egg and vanilla. Gradually add flour.
Shape dough into 1" balls. place on lightly greased baking sheet. bake @ 350 for 15 to 18 minutes. cool.
Combine 1/2 pound of light colored caramels and 2/3 cups of evaporated milk on top of stove. heat until caramels melt, stirring occasionally. Keep mixture warm over hot water. If too thick add 1 to 2 tablespoons of evaporated milk.
Then insert a toothpick into the top of each cookie. dip into caramel coating, allow excess to drop off. In a small bowl dip bottom of cookie into finely ground walnuts. place on cooling rack to set.
