Cashew-Lemon Shortbread Cookies

Ingredients:
1/2 Cup of Roasted Cashews
1 Cup of Butter Softened
1/2 Cup of Sugar
2 Teaspoons of Lemon Extract
1 Teaspoon of vanilla
2 Cups of all purpose flour

Directions:
Preheat Oven 325, place Cashews in food processor or Blender, Process until finely Ground, add Butter Sugar, and Lemon Extract and Vanilla. Process until Well Blended. Add Flour Process using on/off Pulsing Action. Untill Dough is well Blended and begins to Form into a Ball.

Shape Dough into 1 1/2 inch Balls, Roll in Additional Sugar. Place about 2 inches apart on ungreased baking sheets. Flatten with Bottom of Glass. Bake cookies 17-19 Mns, or Just until edges are lightly brown.
