Classic Ice Box Cookies

This recipe makes about 100 cookies.

Ingredients:
1 c. unsalted butter
2 c. brown sugar
2 large eggs
3 1/2 c. flour sifted with 1 t. salt
1 t. baking soda
1 t. cream of tartar
1 t. vanilla
1 c. chopped pecans (walnuts or hickory nuts work well, too)

Directions:
Preheat over to 350 F.

Cream butter and sugar

Add eggs, mix well

Slowly add dry ingredients and mix well.

Add vanilla and chopped nuts.

Mix well.

Divide dough into two rolls about 1 1/2" in diameter and wrap in wax paper.

Chill at least 4 hours or overnight.

Slice into 1/4" - 3/8" slices.

Place on parchment lined cookie sheet and bake at 350 F for 8 -10 minutes.
