Chocolate Coconut Slices

Ingredients:
1 - 3oz pkg cream cheese
1/3 c. sugar
2 t. vanilla
1 c. flaked coconut
1/2 c. chopped nuts
1-1/2 c. flour
1/2 t. baking soda
1/2 t. salt
6 T. butter
1 c. powdered sugar
1 egg
2 oz. (2 squares) unsweetened chocolate (melted and cooled.)

Directions:
Step 1 - Make the filling.

Beat the cream cheese, sugar and 1 t. vanilla until smooth. Add nuts and coconut and mix well. Chill.

Step 2 - the dough.

Stir flour, baking soda and salt together and set aside. Beat the butter for 30 seconds, then mix the powdered sugar into it. Add the egg, chocolate and 1 t. vanilla and beat well. Add the dry ingredients, then chill 30 minutes.

Between 2 pieces of waxed paper, roll dough to a 14 x 4-1/2" rectangle. Remove the top piece of waxed paper. Shape the filling into the center of the rectangle, then roll the dough around it, sealing the edges. Chill thoroughly.

To bake, preheat the oven to 375. Grease a cookie sheet. Slice chilled dough about 1/4" thick. Bake 8 - 10 minutes. Cool 1 minute, then remove to a wire rack.
