Big Soft Ginger Cookies
Ingredients:
2 1/4 cups all purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt (optional)
3/4 cups margarine or butter (softened)
1 cup sugar
1 egg
1/4 cup molasses
2 tablespoons sugar
Directions:
Preheat oven to 350 degrees.
Combine flour, ginger, soda, cinnamon, cloves, and salt; set aside.
In large bowl beat margarine or butter on low for about 30 seconds to soften; Gradually add the 1 cup of sugar, beat till fluffy;
Add egg and molasses, beat well;
Stir in dry ingredients.
Shape into 1 1/2 inch balls (1 heaping tablespoon dough each);
Roll each ball in the 2 tablespoons of sugar and place on ungreased cookie sheet about 2 1/1 inches apart.
Bake about 10 minutes or till light brown and still puffed (do not overcook). Let stand for 2 minutes before transferring to wire rack for cooling.
Makes 24 three-inch cookies.
