Sweet Pineapple Meltaways
1 lb. butter, cold and cut into small pieces
1 lb. All Purpose flour (app. 4 cups)
1 lb. cottage cheese, small curd
1 can sliced pineapple
Cut the butter into the flour by hand or pulse in processor, until the mixture resembles coarse meal.
Add the cottage cheese into the flour mixture by hand.
Mix until well blended.
Form the mixture into walnut size balls.
Bring the balls to room temperature (approximately 15-20 minutes).
Drain the pineapple slices.
Cut each slice into 4 pieces.
Roll out each ball into a thin circle.
Place one piece of pineapple with 1/2 tsp. of granulated sugar on edge of dough surface.
Roll up like a jelly roll.
Place, seam side down on a greased cookie sheet .
Bake at 375 degrees for approximately 25-30 minutes. (or until golden)
Remove from heat and place on cooling rack.
