Peppermint Lassies

Ingredients:
3 cups flour
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
1 1/3 cups butter
1/2 cup sugar
1/2 cup brown sugar
2 unbeaten eggs
4 Tbs. molasses
1 cup finely crushed peppermint candy
frosting:
2 cups powdered sugar
2 tsp. finely crushed peppermint candy
2 Tbs. butter
few drops red food coloring
1-3 Tbs. milk

Directions:
Sift together: 3 cups flour, 1 tsp baking powder, 1 tsp salt, 1 tsp cinnamon, 1 tsp nutmeg, 1/2 tsp ginger.

Cream together (separately): 1 1/3 cups butter, 1/2 cup sugar, 1/2 cup brown sugar. Blend in 2 unbeaten eggs and 4 Tbs. molasses.


Add dry ingredients and 1 cup finely crushed peppermint candy. Mix well. Drop by teaspoonfuls onto greased cookie sheet. Bake at 350 for 8-10 minutes.

(Tip: Watch cookies closely. Remove from oven when tops do not appear wet anymore. They stiffen as they cool, you don't want them to get crunchy)


Frosting: Mix 2 cups powdered sugar, 1 tsp. vanilla, 2 tsp. crushed peppermint candy, 2 Tbs. butter, few drops red food coloring. Blend in 1-3 Tbs. milk until desired consistency.
