White Chocolate Chip Cranberry Cookies
Ingredients:
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter -- softened
1 whole egg
1 teaspoon vanilla
1/2 cup sugar
1/2 cup brown sugar
1 1/4 cups oats
3/4 cup dried cranberries
3/4 cup white chocolate chip
1/2 cup pecan (almonds can be used also) -- chopped
Directions:
Preheat Oven to 350 degrees
Combine flour, baking soda and salt. Mix well and set aside
Beat softened butter until light and creamy. Add 1 egg and vanilla, mixing until smooth
Add sugars to the butter mixture. Mix well
Gradually add flour mixture to the butter and sugar mixture
Stir in oats, chips, nuts, and cranberries
Drop dough by tablespoonfuls onto greased cookie sheet
Bake at 350 for 12 to 15 minutes or until light golden
