Butter Chews
Ingredients:
3/4 c butter
3 T sugar
1-1/2 c flour
3 egg yolks, beaten
2-1/4 c brown sugar
1 c chopped nuts
3/4 c shredded coconut
3 egg whites, beaten, stiff
pinch salt
1/2 t vanilla
Confectioners' sugar
Directions:
Cream butter, add sugar. Blend in flour. Pat into 9 x 9 inch greased pan. Bake 15 minutes at 375 degrees or until delicately browned. Beat egg yolks; add brown sugar. Add nuts and coconut. Fold in beaten egg whites, pinch salt and 1/2 teaspoon vanilla. Pour over baked mixture. Bake 25 to 30 minutes at 350 degrees. Cut into squares and dust with confectioners' sugar.
