Mint Thin Cookies
1 pkg. of Ritz type Crackers
1 pkg. approx. 16oz baking Chocolate
1tsp. Peppermint Extract
Melt Chocolate according to package directions. I find that melting the chocolate in the microwave is the easiest method.
Add 1tsp of Peppermint Extract to the Melted Chocolate. Stir until blended and chocolate is smooth.
Dip Cracker in melted chocolate, coat both sides of Cracker.
Place chocolate coated cracker on cookie sheet lined with wax paper. Repeat until all crackers or all of the chocolate has been used.
Place cookies that are on the cookie sheet in freezer for approx 10 mins to set the chocolate. The longer cookies are in the freezer the more the mint flavor will come through.
