This recipe is a GREAT way to use up an abundance of fresh vegetables from your garden. The chopping is a little tedious but the recipe is REALLY easy and DELICIOUS!
6 roma (or other) tomatoes, diced
1 or 2 fresh peppers (any color)
2 or 3 fresh jalapeno peppers, seeded and chopped
1 small red onion, chopped
1 small yellow or white onion, chopped
2 cloves cloves garlic, chopped
2 Tbsp chopped fresh cilantro
2 Tbsp lime juice
2 Tbsp lemon juice
1 Tbsp balsamic vinegar
1 Tbsp ground cumin
salt and pepper to taste
Mix all ingredients together in a bowl. Season with salt and pepper.
Allow to chill for at least 1 hour before serving. Enjoy!
